Currently looking at proper solutions, I need a quick and easy (free would also be nice) way to generate a very simple items-sold activity report and pick-list (name/address + item) for fulfillment of transactions routed through PayPal.
A shopping cart application can meet your requirement. The application like Magento, osCommerce, and etc have complete features that cover from products quantity, item sold, generate report, journal and etc. Check out those applications.

But I don’t currently have the time and headspace to learn it, and hence my post.
It looks like you are looking for reporting tool for PayPal and not commerce solution, is not it?
If you route transaction to paypal from some other website you can try to use google analeptics with commerce tracking
