I know I can generate a site map online. Which site would you recommend to do so?
More importantly are there ant recommendations for tutorials or books and hand coding your own?

I hand code my sitemap. As long as you are not auto-generating 100s of webpages a day, it is pretty simple and quick to do once you understand the general format.

This link will give you all the information you need. As with most google documentation, I think that it could be organised better, but within an hour or so, you should have your sitemap done.
